I often have leftover strawberries which my kids have rejected for various reasons (the size, it has been cut, it has slightly soft spots 🙄), so I collect these and turn them into a healthy strawberry jam. You can do this with other berries too, as well as stone fruit (and you can even make marmalade in a similar -but not exact- fashion).
We then use the jam to top toast/ make pb +jam/ add to plain yogurt to make strawberry yogurt.
Three ingredients:
1. Chopped strawberries.
2. A squeeze of lemon juice
3. Raw honey (or natural sweetener of choice - gmo free xylitol, erythritol, agave. Coconut sugar will work too but darken the final product).
You can add a nutritional boost if you add in a teaspoon or two of chia seeds.
My measurements tend to be based on what rejects I have accumulated but if I were to approximate I’d say:
2 cups strawberries chopped into small pieces
A squeeze of lemon juice
A tablespoon of raw honey (or to taste, also depends on how sweet your fruit is)
Put all of the above into a small pot with a dash of water. Bring it to a boil, stirring continuously until it thickens (around 5-10 minutes). Add in chia seeds if using. Allow to cool and store in fridge.
