As we head into Spring/Summer over here, the warmer weather has my body intuitively craving salads and fresh raw food. I quickly threw this crunchy, sweet and tangy salad together with what I had in the fridge and proceeded to eat over half it myself, lol. (This is perfect for you if you have a sweet tooth like I do.)
These measurements are approximate so feel free to adjust amounts (or even ingredients!) to what you have available.
Date, Blueberry and Pecan Salad

[ *for optimum nutritional benefits I try to use organic/grass fed ingredients where I can, but if you don't have access to these, don't worry - use what you have, even conventional ingredients are healthier than processed foods and dressings! ]
2 to 3 cups chopped lettuce
1/2 cup chooped basil
1/2 cup chopped dates
1/4 cup blueberries
1/2 avocado (sliced)
3/4 cup pecan nuts (roughly choped or whole)
1 tsp grass fed butter
2 tsp raw honey
2 teaspoons apple cider vinegar
A pinch of salt
Place the lettuce in your salad bowl. Sprinkle over the dates, basil, blueberries and the sliced avocado.
In a small saucepan melt your teaspoon of grass fed butter. Add the pecan nuts and raw honey and stir for 30 seconds. Add a pinch of salt and the apple cider vinegar, stir again and allow to cook for another 30 seconds.
Pour pecans + dressing all over the salad and serve immediately. Enjoy!
